The story of this dish
Potatoes have been grown in the Andes for thousands of years, and mashed potato dishes existed in Peru long before the Spanish arrived. The lime-dressed, layered causa of today took shape over time in Lima.
The origin of the name is disputed. One story says women made it for soldiers "for the cause" (por la causa), either during the wars of independence or the War of the Pacific in the late 19th century. Another links it to the Quechua word kawsay, meaning life or sustenance. Whatever the truth, causa is now one of Peru's favorite cold starters.
