The story of this dish
Lomo saltado is the best-known dish of chifa, Peru's Chinese-influenced cooking. Chinese laborers who came to Peru from the mid-19th century onward brought wok stir-frying and soy sauce, which met local beef, potatoes, tomatoes and chilies. Exactly when the dish took its current form is unknown, but by the 20th century it was a fixture of Lima's restaurants.
