The story of this dish
Chicken and rice arrived in Latin America with the Spanish, and every country went on to develop its own version. What sets Peru's apart is the generous use of cilantro and ají amarillo, which turn the rice green and fresh-tasting.
Similar dishes from northern Peru, such as arroz con pato (rice with duck), also use cilantro along with dark beer or chicha de jora. Arroz con pollo is a star of Sunday lunches and big family meals, especially in Lima, and almost always comes with salsa criolla, a lime-dressed red onion relish.
