The story of this dish
Okonomiyaki takes its name from "okonomi" (as you like it) and "yaki" (grilled or pan-cooked): what goes in is entirely up to the eater. Its roots lie in the thin, sauce-brushed flour pancakes sold to children in the early 20th century. It is said to have spread as a filling meal of flour and cabbage during and after the Second World War, when rice was scarce.
Today there are two famous styles: Osaka style, with everything mixed into the batter, and Hiroshima style, built in layers with noodles in between. In Osaka it is usually made with thin slices of pork belly; this recipe uses thinly sliced beef or prawns instead.
