The story of this dish
The name mujaddara is related to an Arabic word meaning "pockmarked" or "speckled", thought to describe the lentils dotted through the rice. A lentil and rice dish by this name appears in the Kitab al-Tabikh, a cookbook written in Baghdad in the 13th century.
Cheap, filling and meatless, it was for centuries a dish of the poor and of those observing religious fasts in the Levant, and it grew into a home-cooking favorite for everyone. In southern Turkey, in Hatay and Gaziantep, a similar dish is cooked under the name müceddere.
