The story of this dish
Msemen (also called rghaif) is one of the most loved breakfast and afternoon breads of Morocco and the wider Maghreb. Its thin, buttery layers come from stretching, oiling and folding the dough, a technique shared with many laminated flatbreads around the Mediterranean.
In Morocco msemen is made at home and sold at street stalls and cafés. It is eaten sweet with butter and honey, or made savory with a filling of spiced onions, ground meat or rendered suet.
