The story of this dish
Mirza ghasemi is one of the best-known dishes of Gilan, the green, rainy province on the Caspian coast. The cooking of this region stands out in Iran for its generous use of garlic, herbs and charred vegetables.
The origin of the name is uncertain. According to popular tradition it is attributed to an official known as Mirza Ghasem who served in Gilan during the Qajar era, but the story is not documented. Today it is enjoyed all over Iran as a lunch or breakfast dish.
