The story of this dish
Massaman is one of the mildest and most aromatic Thai curries, using spices unusual in Thai cooking such as cinnamon, cardamom, cloves and nutmeg. Its name is commonly believed to come from an old form of the word "Muslim" (Mussulman), linking it to Persian and Indian Muslim traders, though its exact origin is debated.
Associated with the Muslim communities of southern Thailand, massaman is traditionally made with beef, goat or chicken. It is said to be mentioned in an early 19th-century poem attributed to King Rama II.
