The story of this dish
Manakish (singular man'oushe) comes from an Arabic root meaning "engraved" or "carved", thought to refer to the dimples pressed into the dough with the fingertips. In Lebanon it is baked fresh each morning at neighborhood bakeries (furn) and eaten on the way to school or work.
According to popular tradition, families baking their weekly bread would set aside some dough, top it with za'atar and olive oil and eat it for breakfast. Today there are cheese, meat and kishk versions too, but the classic remains za'atar, a blend of wild thyme, sumac and sesame.
