The story of this dish
Larb is regarded as the national dish of Laos and is also a staple of Isan, the northeastern region of Thailand with close cultural ties to Laos. It is said that its name sounds like the Lao word for "luck", which is why it is often made for celebrations.
Larb can be made with chicken, beef, duck or fish, and there are regional versions using raw meat. It spread throughout Thailand with migrants from Isan to Bangkok and is now the inseparable companion of som tam and sticky rice.
