The story of this dish
Joojeh means "chick" or young chicken in Persian, and as the name suggests, this kebab was traditionally made with tender young birds. It is one of the most popular kebabs in Iran, served at kebab houses, family picnics and garden gatherings.
Kebab culture is a shared heritage of Iran and Turkey, but what sets joojeh kabab apart is the golden color and distinctive aroma of saffron. In Iran, kebabs are typically served with buttery rice and grilled tomatoes.
Persian Cuisine
Chelow with Tahdig
Fluffy, saffron-scented Persian steamed rice with tahdig, the golden, crispy crust from the bottom of the pot that everyone fights over.
Ghormeh Sabzi
Iran's most beloved and fragrant stew, in which slow-fried herbs simmer for hours with lamb, kidney beans and dried limes.
