The story of this dish
In Thai, red curry is called "gaeng phet", which literally means "spicy curry"; its color comes from the large amount of dried red chilies in the paste. The paste also contains shallots, garlic, lemongrass, galangal and usually shrimp paste.
Thai curries are traditionally made with pastes pounded in a mortar, though using ready-made paste is now common at home and in many restaurants. Red curry can be made with chicken, duck, beef or vegetables, and, alongside green curry, it is one of the best-known Thai curries.
