The story of this dish
Fried rice spread from Chinese cooking across Southeast Asia and most likely reached Thailand with Chinese immigrants. Thai khao pad sets itself apart with fish sauce, fragrant jasmine rice and the lime wedge that always comes on the side.
In Thailand khao pad is the everyday way to use up leftover rice and is sold at almost every street stall. Pork or shrimp are common in the original; this home version uses chicken, but shrimp or beef work just as well.
