The story of this dish
"Tagine" is the name of both the North African clay pot with a cone-shaped lid and the slow-cooked dishes made in it. The conical lid collects steam and drips it back onto the food, allowing cooking with very little water, a real advantage in dry regions.
Kefta tagine is one of the most everyday and best-loved tagines in Morocco. Kefta means spiced ground meat, a word sharing a Persian root with the Turkish köfte. Quick and made in a single pot, it is a staple of home kitchens and roadside eateries alike.
