The story of this dish
Karaage is the Japanese name for the technique of coating ingredients in starch or flour and deep-frying them, and chicken karaage is its best-loved example. The first part of the word, "kara", is linked to an old word referring to China, and the method is thought to have arrived under Chinese influence, though its exact origin is debated.
Chicken karaage spread across Japan in the second half of the 20th century through restaurants, izakaya and home kitchens. The city of Nakatsu on the island of Kyushu is famous for its karaage shops and promotes itself as the karaage capital. Traditional marinades often include sake; this recipe gets the same deep flavour from soy, ginger and garlic without any alcohol.
