The story of this dish
Hummus simply means "chickpea" in Arabic; the full name of the dip is hummus bi tahina, "chickpeas with tahini". Medieval Arabic cookbooks contain recipes for chickpea purées, but exactly where today's version with tahini and lemon was born is not known.
Lebanon, Syria, Palestine, Israel, Jordan and southern Turkey all count hummus as their own, and the debate has sometimes become a real contest: in the late 2000s Lebanon and Israel competed for the record of the world's largest plate of hummus. Whoever claims it, it is unmistakably a symbol of the shared Eastern Mediterranean table.
