The story of this dish
In Anatolia, a tandır is a traditional oven sunk into the ground or built of clay, with a fire burning inside. It is used for baking bread and for cooking large cuts of meat for hours over gentle heat until they fall off the bone. The technique has roots across Central Asia and Iran, and in Turkish cooking it is closely tied to lamb.
Regional specialties such as Konya's fırın kebabı and the tandır kebabı of Ankara and Central Anatolia are variations on the same tradition. Without a real tandır at home, wrapping the meat and slow-roasting it in a tightly sealed dish gets remarkably close to that melting texture.
