The story of this dish
As its name suggests, düğün çorbası ("wedding soup") is cooked in big cauldrons for weddings, religious holidays and large gatherings across Anatolia and served to guests as the first course. Because it makes good use of the broth from an animal slaughtered for the feast, it is seen as a symbol of plenty and sharing.
Recipes vary from region to region, but the base is always the same: meat broth, shredded meat and a terbiye, a liaison of egg, lemon or yogurt. Soups finished this way form a much-loved family in Ottoman-Turkish cooking, and wedding soup is one of its best-known members.
