The story of this dish
The name crème brûlée, "burnt cream", first appears in French cook François Massialot's cookbook published in 1691. Its origins are disputed, though: Catalonia has long made a very similar dessert, crema catalana, and in England it is associated with the "burnt cream" of Trinity College, Cambridge.
After a long period of relative obscurity, it became hugely popular on restaurant menus again in the late 20th century. Traditionally the sugar was caramelized with a red-hot iron called a salamander; today most kitchens use a blowtorch, but a hot oven grill does a good job at home.
