The story of this dish
As its name suggests, Çerkez tavuğu ("Circassian chicken") is associated with the cuisine of the Circassians, a people from the Caucasus. With the large Circassian migrations from the Caucasus into Ottoman lands in the 19th century, this and similar dishes came to Anatolia and in time entered Istanbul cooking as well.
Sauces of walnuts, bread and garlic are also found in Caucasian and Georgian cooking. In Turkey today Çerkez tavuğu is a beloved cold meze in meyhanes and restaurants, and a special dish for guests at home.
