The story of this dish
B'ssara, a purée of dried fava beans or peas, is one of the oldest and plainest dishes of North Africa. Similar bean purées are found from Egypt to Morocco, and the Turkish olive-oil fava is a distant relative.
In Morocco it is especially loved on cold winter mornings, sold from street stalls in northern mountain towns and working-class city neighborhoods as a cheap, filling breakfast. It is eaten both as a hot soup in a bowl and as a thick dip on a plate.
