The story of this dish
Quince has been grown around Anatolia and the Caucasus for thousands of years. Since it is hard and astringent raw, it has mostly been eaten cooked, as jam, jelly or desserts.
Slowly poached with sugar and served with kaymak, ayva tatlısı is one of the best-loved autumn and winter desserts in Turkey. Watching the quince turn from pale yellow to deep pinkish red during the long cooking is part of its charm.
