The story of this dish
In Persian cooking, ash is the general name for thick soups made with legumes, grains and herbs, and reshteh, meaning "thread" in Persian, is the name for the noodles. Ash reshteh is one of the best loved of these soups.
By tradition it is cooked before Nowruz or in the first days of the new year, the noodles symbolizing taking hold of the threads of good fortune. It is also said to be made after someone sets off on a long journey, as a wish for their safe return.
