The story of this dish
Rice arrived in Mexico with the Spanish in the 16th century, but it soon met the local tomatoes, onions and chiles and took on an identity of its own. In Mexico arroz rojo is often called "arroz a la mexicana" or simply "sopa de arroz" (dry soup).
Toasting rice in fat before simmering it in liquid echoes Spanish and Middle Eastern pilaf traditions, which is why anyone who knows Turkish pilav will feel at home making it. Together with refried beans, it is the classic side served with countless Mexican main dishes.
