The story of this dish
Sopa de lima is one of the signature dishes of the Yucatán Peninsula in southeastern Mexico. The lima in its name is a local citrus, called lima agria or lima yucateca, that is different from an ordinary lime, with a slightly bitter, floral aroma. Outside the region it is very hard to find, so a mix of lime and a little bitter orange or grapefruit juice is a good stand-in.
Yucatecan cooking blends Maya traditions with Spanish and Caribbean influences, and the cinnamon, cloves and allspice in this chicken broth reflect that mix. Today sopa de lima is a common starter in homes and restaurants across the region, especially in Mérida.
