The story of this dish
Adas polo means "rice with lentils" in Persian. Iranian cooks are famous for their method of parboiling rice and then steaming it, producing fluffy, separate grains and a golden crust at the bottom called tahdig. Adas polo is one of the simplest and most budget-friendly dishes made this way.
Pairing sweet and savory, with raisins and dates cooked alongside rice, is a long-standing trait of Persian cooking. The dish is sometimes enriched with tiny meatballs or browned ground meat, but on its own it makes a satisfying meatless main.
