The story of this dish
Leeks have been grown in Anatolia and around the Mediterranean since ancient times and are considered a typical winter vegetable in Turkish cooking. Alongside leek börek, leek patties and leeks with meat, the olive-oil version is the simplest and most common.
A handful of rice makes this dish more filling; it binds the cooking liquid and gives the dish a gentle body. It is one of the most frequently seen olive-oil dishes in Turkish homes and neighborhood restaurants during winter.
