The story of this dish
Coffee arrived in Vietnam with the French in the 19th century and grew into one of the country's most important crops; today Vietnam is one of the world's largest coffee producers, growing mostly robusta. Robusta's strong, bitter character defines Vietnamese coffee.
Fresh milk spoiled quickly in the hot climate and was long hard to come by, which made shelf-stable sweetened condensed milk coffee's natural partner. The small metal phin, brewing one cup at a time, turns coffee into a slow, social ritual, and cà phê sữa đá is now a symbol of Vietnam's street cafés.
