The story of this dish
Bánh mì simply means "bread" in Vietnamese. The baguette arrived with French colonial rule from the second half of the 19th century, and Vietnamese bakers developed their own version with a thin, crackly crust and airy crumb, sometimes made with some rice flour alongside wheat.
The filled sandwich as we know it is generally said to have taken off at Saigon street stalls in the 1950s, combining French-influenced mayonnaise and pâté with Vietnamese pickles, fresh herbs and chilies. The classic bánh mì thịt is usually made with various cold cuts, mostly pork; this version uses lemongrass chicken, also a favorite in Vietnam.
