The story of this dish
Bún chả is one of Hanoi's signature dishes: bún means rice vermicelli and chả means grilled or fried meat. At lunchtime the smoke from small charcoal grills on Hanoi's street corners is part of the experience.
The original uses pork patties together with thinly sliced grilled pork belly; this recipe applies the same technique to beef or chicken. The dish became world-famous in 2016, when Barack Obama and chef Anthony Bourdain shared bún chả at a modest eatery in Hanoi.
