The story of this dish
Gỏi cuốn means "salad roll" and is especially associated with southern Vietnam. Because it is not fried and is made with fresh herbs and boiled ingredients, it is often called a "summer roll" or "fresh spring roll" in the West.
At its heart is bánh tráng, rice paper made from rice flour and water and dried in thin sheets. Traditional gỏi cuốn usually contains boiled pork alongside the shrimp; this version uses shrimp only, though you can add thinly sliced poached chicken breast.
