The story of this dish
The word helva comes from an Arabic root meaning "sweet" and has long described a whole family of Turkish sweets made from flour, semolina or tahini. In Ottoman times, neighbors are known to have gathered on winter nights for "helva conversations", socializing over a shared tray.
In Turkey, flour halva is best known as the sweet made and shared with neighbors after a death in the family; the expression "to toast halva after someone" comes from this custom. It is also made on religious holy nights, for guests, or simply on a cold evening when someone craves something sweet.
