The story of this dish
Pozole is a Mexican dish whose roots go back before the Spanish conquest. Its name comes from a Nahuatl word usually translated as "boiled corn". The soup is built on large kernels of cacahuazintle maize that are cooked in an alkaline lime solution and hulled, a process called nixtamalization, which makes them puff open like flowers; in English they are known as hominy.
