The story of this dish
Croquettes originated in France; the name comes from the French "croquer", to crunch, and they spread through European aristocratic and bourgeois kitchens in the 18th and 19th centuries. Arriving in Spain under French culinary influence, they became a béchamel-rich, creamy-centred dish and were soon thoroughly Spanish.
In Spanish homes croquettes are also a way to use leftovers: chicken from a stew (cocido) or from making stock returns to the table the next day as croquetas. The most classic varieties today are chicken and ham (croquetas de jamón); since the ham version contains pork, this recipe sticks to chicken.
