The story of this dish
Salmorejo is the emblematic cold soup of Córdoba in Andalusia. Unlike its better-known relative gazpacho, it contains no cucumber or pepper, and because it uses more bread it is much thicker, almost a sauce, eaten with a spoon.
Pounding bread, garlic, oil and vinegar in a mortar is a very old tradition of Andalusian peasant cooking; tomatoes joined the recipe only after arriving from the Americas and spreading through the region. It is traditionally topped with hard-boiled egg and chopped jamón serrano (cured ham); this pork-free version suggests beef bresaola or tuna instead.
Spanish Cuisine
Spanish Omelette (Tortilla Española)
Potatoes and onion gently poached in olive oil, then set with egg into a thick golden cake: Spain's best-loved tapa.
Gazpacho
Ripe tomatoes, cucumber, pepper, garlic and olive oil blended and served ice-cold: the refreshing summer soup of Andalusia.
