The story of this dish
Gazpacho comes from Andalusia in southern Spain. Its roots go back long before tomatoes, to simple soups of bread, olive oil, garlic, vinegar and water pounded together by farm labourers, which offered cooling and sustenance during work in the heat.
After tomatoes and peppers arrived from the Americas they gradually joined the recipe, giving rise to the red gazpacho we know today. The origin of the word is uncertain, with several competing explanations. Its close cousin, salmorejo from Córdoba, uses more bread and is much thicker.
