The story of this dish
Potatoes reached Europe from the Americas in the 16th century, but the earliest known written references to the potato tortilla date from the early 19th century. Legend says it was created to feed troops during the Carlist Wars, though no firm evidence supports the story.
Today the tortilla sits in wedges on the counter of nearly every bar in Spain and is a staple of picnics and packed lunches. The great Spanish debate is about onion: some insist on a tortilla without it, while most prefer it with. How runny the centre should be also varies from family to family.
Spanish Cuisine
Gazpacho
Ripe tomatoes, cucumber, pepper, garlic and olive oil blended and served ice-cold: the refreshing summer soup of Andalusia.
Patatas Bravas
Crisp-edged, fluffy potato cubes served with a spicy smoked-paprika sauce: the classic tapa of Madrid's bars.
