The story of this dish
The word sote comes from the French sauté, cooking quickly in a little fat over high heat. From the 19th century onward, French cooking influenced Ottoman palace and mansion kitchens, and words and techniques like this one entered Turkish cuisine.
Over time tavuk sote took on a thoroughly local identity with peppers, tomatoes and tomato paste. Today it is a fixture in the steam trays of workers' restaurants and one of the quickest weeknight dinners at home.
