The story of this dish
"Şiş" is the Turkish word for a long, thin metal rod, and şiş kebap is the tradition of threading meat onto these rods and cooking it over fire. Grilling meat on skewers is an ancient technique often associated with the nomadic life that stretched from Central Asia to Anatolia.
Chicken şiş became widespread in Turkish kebab houses and homes, especially in the 20th century, as a lighter and more affordable alternative to lamb and beef skewers. Today, with its yogurt and tomato-paste marinade, it is one of the favorites of any Turkish barbecue.
