The story of this dish
Katsu is one of the yōshoku dishes Japan adapted from Western cooking during the Meiji era in the late 19th century; the name comes from the English word "cutlet". The European breaded cutlet, often pan-fried in butter, evolved in Japan into a deep-fried version with coarse panko crumbs and quickly became a national favorite.
Its most famous form is tonkatsu, made with pork ("ton" means pork), which also gives its name to the thick, fruity sauce served alongside. Chicken katsu uses the same technique and is hugely popular in Japan as well as in the plate lunches of Hawaii.
