The story of this dish
Fajitas are a Tex-Mex dish born on the cattle ranches of South Texas near the Mexican border. The word comes from the Spanish faja, meaning "belt" or "sash", and originally referred to skirt steak, the long, thin cut from the diaphragm. According to the usual story, Mexican vaqueros working the ranches in the first half of the 20th century were given this cheap cut, grilled it over open fires and wrapped it in tortillas.
Fajitas reached a wide audience in the 1960s and 1970s through Texas fairs and restaurants, where serving them sizzling on a hot iron platter became part of the show. Today the name covers chicken, shrimp and vegetable versions as well as beef.
