The story of this dish
Tas kebabı takes its name from the "tas", a deep metal bowl in which it was traditionally cooked or served. In Ottoman cooking the word "kebap" did not only mean grilled meat; it also covered meat cooked slowly in its own juices or a little water, and tas kebabı is one of the best known of these braised kebabs.
Today it is a fixture in the steam trays of Turkish workers' restaurants and a favorite Sunday dish at home. Some regions add potatoes or eggplant, but the classic version is simply meat in a rich tomato sauce, served with buttery rice pilaf.
