The story of this dish
Sucuk is one of the oldest cured meats in Turkish cooking: ground meat kneaded with garlic, cumin and red pepper, stuffed into casings and dried. In Turkey it is made from beef or mutton, and the cities of Kayseri and Afyon are especially famous for it. Outside Turkey, look for it in Turkish or Middle Eastern shops; a spicy beef chorizo-style sausage is the closest substitute.
Sucuklu yumurta, served sizzling in a small two-handled pan, is the classic hot dish of a weekend Turkish breakfast and of highway rest stops. Simple and filling, it is one of the first things people think of when they hear "Turkish breakfast".
