The story of this dish
The word köfte comes from the Persian kufta, meaning "pounded", describing meat beaten until fine. The tradition runs from Ottoman kitchens to today and is so rich that almost every Turkish region has its own köfte, with Tekirdağ, İnegöl, Akçaabat and Sultanahmet among the best known.
Izgara köfte is the simplest and most home-cooked member of the family. It turns up at backyard barbecues, in workers' restaurants and at street carts tucked into bread, every single day.
