The story of this dish
Börek is the Turkish umbrella term for pastries with a filling, and the tradition is generally thought to reach back to the food culture of the Turkic peoples of Central Asia. In the Ottoman period börek making became a craft of its own, and the skill of rolling paper-thin dough sheets was highly prized.
Su böreği ("water börek") stands apart because its sheets are boiled before baking. Since it takes time and patience, at home it is mostly made for religious holidays, guests and special occasions, and in many families being able to make a good su böreği is seen as a mark of real skill.
