The story of this dish
Sigara böreği means "cigarette börek", named for its long, thin rolled shape. The börek tradition itself is far older: pastries made from thin layers of dough are among the most deep-rooted creations of Ottoman cuisine, and the palace kitchens made many varieties.
With ready-made yufka widely available, sigara böreği became one of the easiest treats to make at home. Today it is a fixture of afternoon tea, breakfast spreads and entertaining guests, and besides the cheese version, fillings of minced meat or potato are also popular.
