The story of this dish
Schupfnudeln are loved in Swabia and Baden in south-western Germany, and in Austria. The name comes from the way the dough is shaped by pushing it back and forth in the palms, "schupfen" in dialect, and the noodles also go by playful local nicknames such as "Bubespitzle" or "Fingernudeln".
Although it is not certain, the dough is thought to have been made from rye or wheat flour before potatoes became widespread in the region in the 18th century. Today schupfnudeln are a winter favourite, sold pan-fried with sauerkraut at Christmas markets, and there is also a sweet version with poppy seeds and sugar.
