The story of this dish
Potatoes reached Germany from the Americas by way of other European countries and became widespread in the 18th century. Frederick the Great of Prussia famously issued orders promoting potato cultivation, helping the tuber become a cornerstone of German cooking.
Kartoffelsalat is made all over Germany, but there is no single recipe. Broadly speaking, mayonnaise versions are more common in the north, while the south favors dressings of vinegar and broth like this one. Swabian-style potato salad is a classic partner for schnitzel, meatballs and sausages, and sausages with potato salad are a Christmas Eve tradition in many German homes.
