The story of this dish
Potatoes reached Europe from the Americas in the 16th century, but only became a staple of ordinary German households in the 18th century. Frederick the Great of Prussia is known for promoting potato cultivation, and over the following centuries the potato became a cornerstone of German cooking.
Kartoffelsuppe is one of the simplest ways to use this cheap, filling crop, and it varies by region: some cooks add smoky bacon (Speck) or Wiener sausages, others keep it a plain vegetable soup. Our version swaps the pork for beef frankfurters, which bring the same smoky, salty note.
