The story of this dish
Rotkohl is a classic winter side dish not only in Germany but also in Austria, Denmark and much of Central Europe. In the south it is often called Blaukraut, "blue cabbage", a nod to the way the cabbage turns bluish when cooked without acid.
Traditionally it is cooked in lard (Schmalz) or goose fat, and some recipes add red wine. This version uses butter and apple juice instead. It is served with roast goose at Christmas and alongside Sauerbraten and meatballs for Sunday lunch.
